@MichaelKudrna I think the other piece people miss is customers don’t do the tip included math when looking at prices, they just see one restaurant costs more for the same thing.

I tried this once and everyone hated it and we reversed course within a month.

In our situation there is no % of sales
Utilities, etc are included in the lease
We get access to a large commissary

Every other food hall concept that has approached us has super high rent, % sales no traffic
