Let's grab our mugs and step outside to the back porch —the morning air is crisp, and if your garden is anything like mine, the squash vines are starting to look tired and the onion tops have fallen over flat.

Most gardeners think that as soon as you cut an onion or a winter squash from the vine, the job is done and it’s time to box them up for winter. But here is the old-school secret that makes the difference between eating fresh homegrown squash in February and finding a bucket of mushy rot in November: the harvest isn't finished until the cure is done.

Curing isn’t complicated—it’s just Mother Nature's way of sealing the pantry door. It toughens the outer skin, heals any tiny surface nicks, shrinks the neck of the bulb, and concentrates the natural sugars inside.
Here is how to cure your haul for a rock-solid 6-month shelf life:

🧅Curing Your Onions:

• Don't Rush to Trim: When the green tops flop over and turn brown, lift the bulbs gently on a dry day. Do not cut the roots or tops off yet!

• Give Them Air & Shade: Lay them out in a single layer on screens, cardboard, or a slatted porch table where they get good airflow but stay out of direct, scorching sunlight and rain.

• The "Paper Test": Let them cure for 2 to 3 weeks until the outer wrappers are crackly and papery, the roots feel like dry wire, and the neck is completely dry with no green moisture left when you squeeze it. Now you can trim the tops to 1 inch (or braid them together) and store them in a cool, dark, dry spot.

🎃Curing Winter Squash (Butternut, Hubbard, Pie Pumpkins):

• The Stem Rule: Always leave at least 2 to 3 inches of "handle" (stem) attached to each squash. Never carry a squash by its stem—if that handle snaps off, rot will walk right through the wound.

• The Warm-Up Phase: Unlike onions, winter squash love warm curing (around 70°F–80°F) for 10 to 14 days. A sunny porch, warm garage, or sunny greenhouse bench works wonders. This hardens the rind so hard your fingernail won't dent it. (Note: Acorn squash doesn't need hot curing—it prefers going straight to cool storage!)

• Keep Them Off Bare Concrete: When you move them to their winter resting place (around 50°F–55°F in a cool pantry or basement), keep them in wooden crates, slatted shelves, or on cardboard. Don't let them crowd together or sit directly on damp concrete.
Taking these extra couple of weeks to cure your harvest means you'll be pulling sweet, buttery squash and crisp onions straight from your pantry when the snow is flying outside.

Grab your coffee and pull up a chair for a minute—I’ve got a neat little trick to show you.

If your kitchen counters look anything like mine right now, you’re probably up to your elbows in ripe tomatoes, Mason jars, and canning steam. But before you toss those tomato cores into the compost bucket, stop right there!

That’s pure gold you’re holding. Because when you grow open-pollinated heirlooms, you aren’t just growing one season of food—you’re holding next year’s garden in the palm of your hand.

Seed-saving tomatoes sounds fancy, but my favorite way to do it is about as simple and old-fashioned as it gets:

🍅Scoop them into a jelly jar: Squeeze the seeds, juice, and that slippery gel right into an old glass jar. Add just a little splash of warm water.
🍅Let it sit on the counter: Leave it alone for about three days. It’s going to get a little funky, and you’ll see a pale film grow across the top. Don’t panic—that mold is doing the heavy lifting! It dissolves that slippery coating around the seed and naturally cleans it so it’s ready to sleep for the winter.
🍅The easy kitchen rinse: Fill the jar with water, give it a swirl, and gently tip out the top liquid and the floating duds. The plump, healthy seeds will sink like little stones straight to the bottom.
🍅Dry them flat: Dump those clean seeds onto an uncoated paper plate or a coffee filter (don’t use paper towels, or they’ll glue themselves to the paper forever!). Let them dry out on the counter away from direct sun for about a week until they snap when bent.
🍅Slip them into an envelope or a little sealed pouch, tuck them somewhere cool and dry, and boom—you just secured your family’s tomato patch for next spring without spending a dime.

Holding a handful of seeds you grew with your own two hands is one of the most rewarding feelings on the homestead.
