The honey mangos from Costco have been so freaking good lately. And I’m so fortunate to have a neighbor with a mulberry tree that doesn’t mind me picking berries to my hearts desire.😊
This is what I call a perfect dinner.
SALAD!🥬💚
Black beans, cukes, toms, vegan cheese, radishes, sunflower seeds, green onions, raisins, & a whole head of butter leaf lettuce. YUM!
Homemade Dressing Recipe:
2 parts olive oil
1 part molasses
1 part apple cider vinegar
🍊⚡️5000 Volt Juice⚡️🍊
10 oranges
2 red bell peppers, seeded
2 jalapeño peppers, seeded
2 stalks celery
1 large clove garlic
Run all ingredients through a juicer. Makes about 6 cups.
This juice is delicious! Trust me!
Yummy Vegan Cookies
15.5 oz can garbanzo beans, drained & rinsed
1/2 C peanut butter
1/3 C maple syrup
2 tsp vanilla extract
1/2 tsp baking soda
Pinch of salt
1/2 cup choc chips
Blend first 6 ingrdnts for 1 min until smooth. Stir in choc chips. Bake for 20 min at 350 F.
I just made this Lemon Ginger Blast and it is delish!💚I thought for sure I would need more apples to sweeten it. But nope. The recipe as is is perfect!👌
I spent the weekend in Austin, TX. Lucky for me, I had the most gracious host, who fed me all the vegan food and took me around exploring. Austin is truly a high vibe good energy city.
I made a vegan chicken salad sandwich. Instead of chicken I used canned young jackfruit. I prefer using young jackfruit as pulled pork bbq instead. But this turned out pretty good. #tryingnewthings
