1800s Argentina: British writer William Henry Hudson visits the Pampas, encounters gauchos. Documents their diet with horrified fascination.
"The gaucho eats nothing but beef. Flesh morning, noon, and night. Never bread, never vegetables, rarely salt."
Hudson expects malnutrition and disease. Finds "men of extraordinary stamina and strength, capable of riding 12-14 hours without rest, then dancing all night."
The diet: beef, mate tea, occasionally grilled kidney fat (delicacy). Nothing else.
Darwin visits 1832-1833, observes gaucho life: "I was surprised at the difficulty persuading gauchos to eat anything but beef. I brought biscuits and found them thrown away. They'd rather go hungry than eat bread if beef was available tomorrow."
Typical meals: Morning - beef roasted over fire, fattier cuts. Afternoon - grilled ribs. Evening - beef again, tougher cuts slow-cooked.
Zero vegetables. Zero grains. Zero variety. Just beef and tea.
Hudson documents outcomes: "The gauchos suffer none of the ailments common to civilised man. No digestive troubles, no obesity, no tooth decay I could observe. Their teeth were uniformly excellent despite never cleaning them and consuming nothing but meat. Physical endurance such that they could ride for days with minimal rest, fight when necessary, resume riding without apparent fatigue."
French physician Dr. Jules Crevaux, 1850s-1870s: "These men live exclusively on animal flesh and appear healthier than our European peasantry who eat varied diet of grains and vegetables."
When asked why they don't eat bread or vegetables, common response: "That's food for horses and cattle. We eat cattle."
They understood hierarchy. Cattle eat grass, convert to meat. Humans eat meat. Eating what cattle eat makes you perform like cattle.
Into early 1900s, traditional gauchos maintained beef-exclusive diet. Then European immigration brought wheat cultivation.
Health transformation documented by Argentine physicians. Traditional gauchos: healthy into old age. Urbanised former gauchos on European diets: diabetes, obesity, cardiovascular disease, dental decay.
Modern Argentina: 28% obesity, cardiovascular disease leading cause of death, diabetes nearly 10%.
The gauchos who ate nothing but beef had none of these. They rode horses 12 hours daily into their 60s, maintained teeth without dental care, died from accidents or old age, not chronic disease.
Same beef. Different context. When you eat beef with grains, seed oils, sugar: modern disease. Beef alone: You have the health of a 19th century gaucho.

Define este modelo como "casi inexistente en otras economías avanzadas, genera incentivos que favorecen la agresividad recaudatoria por encima de la precisión y la justicia. El resultado es un entorno donde proliferan conflictos de interés, investigaciones precipitadas y un impacto devastador en familias, autónomos y empresas que, aun teniendo razón, quedan atrapados en un engranaje diseñado para recaudar primero y preguntar después."
A ello se suma, dicen, que, "en España, los contribuyentes deben pagar una liquidación fiscal incluso si es manifiestamente errónea antes de poder recurrirla. Esto implica embargos, intereses acumulados y años de incertidumbre judicial que muchos no pueden soportar."
Y termina con que "más de la mitad de los recursos se ganan finalmente contra Hacienda, una cifra que revela la magnitud del problema: un sistema que no solo se equivoca, sino que penaliza a quien intenta defenderse. En definitiva, un modelo donde la Administración siempre gana… y el ciudadano siempre pierde."

The @USTreasury has concluded 4 days of intensive meetings with Minister @LuisCaputoAR and his team in DC. We discussed Argentina’s strong economic fundamentals, including structural changes already underway that will generate significant dollar-denominated exports and foreign exchange reserves.
Argentina faces a moment of acute illiquidity. The international community – including @IMFNews – is unified behind Argentina and its prudent fiscal strategy, but only the United States can act swiftly. And act we will.
To that end, today we directly purchased Argentine pesos.
Additionally, we have finalized a $20 billion currency swap framework with Argentina’s central bank. The U.S. Treasury is prepared, immediately, to take whatever exceptional measures are warranted to provide stability to markets.
I emphasized to Minister Caputo that @POTUS@realDonaldTrump’s America First economic leadership is committed to strengthening our allies who welcome fair trade and American investment.
I continue to hear from American business leaders who, thanks to President Milei’s leadership, are eager to tie the American and Argentine economies more closely together. The Trump administration is resolute in our support for allies of the United States, and to that end we also discussed Argentina’s investment incentives, and U.S. tools to powerfully support investment in our strategic partners.
Minister Caputo informed me of his close coordination with the IMF on Argentina’s commitments under its program. Argentina’s policies, when anchored on fiscal discipline, are sound. Its exchange rate band remains fit for purpose.
We reviewed the broad political consensus in Argentina for the second half of President @JMilei’s term. I was encouraged by their focus on achieving fiscally sound economic freedom for the people of Argentina via lower taxes, higher investment, private sector job creation, and partnering with allies. As Argentina lifts the dead weight of the state and stops spending into inflation, great things are possible.
The success of Argentina’s reform agenda is of systemic importance, and a strong, stable Argentina which helps anchor a prosperous Western Hemisphere is in the strategic interest of the United States. Their success should be a bipartisan priority.
I look forward to the meeting between President Trump and President Milei on October 14, and to seeing Minister Caputo again on the margins of the IMF Annual Meetings.
