He is grinding herbs into an elixir of immortality, up in the Moon Palace, where he keeps the goddess Chang'e company. Cute and fluffy and white, and not an ordinary bunny at all.
In one Chinese telling of how he got there, the rabbit was tested by a starving stranger who asked him for food. The monkey had fruit to offer. The otter had fish. The rabbit could find nothing but grass, and so he offered himself instead.
