Many people may say it's because she loves him so much she risks it. However I think she is just built to survive the hunt and could at least match him in battle, he swings at her so she just knocks him out to drag him home. The music box was just the easy way.

Hold on. In Bloodborne Father Gascoigne's wife, Viola, left to retrieve her husband on nights of the hunt. We find her in the tomb, now this means he left as the beasts showed up, this woman grabs nothing but a music box, and braves Yharnam. I got a theory.

A hunter with beast blood is scary as it's shown not only through the player but several other hunters to make them much stronger. With his slipping memory I imagine he had to have at least shown her his strength, enough to let her know the trick won't last much longer.
