yugioh's the most interesting and obvious case of this to me...for the first 60 chapters it was about games in general, kaiba was introduced as a one-off villain who was obsessed with duel monsters. him and the card game were so popular the manga pivoted to be exclusively that!

I always think about this irt yugioh...I remember kazuki takahashi saying that he was in the hospital while writing the final arc, that he had to cut certain plotlines short because of deadlines. I think people really underestimate how much deadlines and ratings effect manga!
