home made seitan is cooked in a rich paste of ginger, galangal, toasted coconut, chili, lemongrass and shallot, then coconut milk is added to the whole thing and reduced.

cooking a batch of jackfruit carnitas with ancho chile, cinnamon, coriander, and the same Fritz Kola we sell in the cafe

when it's done we throw it in a toastie with smoked cheese, sweet potato and onion chutney :+)
