@Harold_McGee “Too early” is within the preliminary simmering of the stock (pho); the VietNamese elders say, heating the fish sauce with the broth will make it spoil faster.. finishing with it is flavor

@vagrantcook How early is too early? Fish sauce itself is salty+acidic no matter when it's added, and it's only spoonfuls in a pot of broth. But it's always good to do the experiment, compare methods and see if there's really a difference.
