Not a fighting game expert or even a player of the genre but I can kind of sum it up with 2 reasons (from my opinion)

1: as time passes from release less new players jump in causing a feedback loop of playing better and better players than you especially if said fighting game is your first since you would need to learn the basics of a fighting game.

2: learning to play at a decent level takes a lot of actual dedication that most people aren’t willing to try for.

Mash these together and you’re destined to lose interest unless you are already familiar with the genre.
