@INDMonke @HighElf_BBSR But yeah, you should definitely try it with Andhra style fish/chicken fry.. They will go perfectly together.. Don't try the pakhala with fermented rice/water(๐ญ I personally feel the taste is too pungent but other Odia people will disagree)
You can just add curd,lemon, etc...

In Telugu they call it aratikaya fry, carrot fry, etc... You can fry the brinjal by slicing it in round shape.
The amaranthus(green leafy thingy) is called as mullatotakora if I remember correctly or just have gongura.
