@lisethornton Pat the skin dry with tissue, rub a tiny bit of oil over it & then sprinkle lots of salt (the oil is to help the salt adhere to the skin better). Blast the skin on a v high temp for the first 20 mins, then cook as normal. Works every time 👌🏻
