Jean Grey did not just use basic telepathy to heal Spider-Man. After Peter took the bullet meant for her, she locked into a full psychic connection with him and used her newly unlocked Omega-level powers to take direct control of his body. She literally breathed for him, kept his heart beating, stopped the internal bleeding, and held his systems stable on a cellular level while his own healing factor tried to catch up.
It went far beyond reading minds or projecting thoughts. At that point her telekinesis had grown powerful enough to manipulate the physical structure of his body from the inside, repairing damage and sustaining vital functions the same way she has done in the comics when she reaches full Omega potential. She stayed linked to him the entire time he was unconscious, essentially running his body like a second set of systems until the doctors could stabilize him and he could breathe on his own again.
That is why the moment feels so different from anything earlier in the movie. She was no longer just controlling people or freezing the city. She was actively keeping another person alive through pure force of will and power, which is exactly the kind of high-level ability that marks her as something far beyond a regular telepath.
