Mediterranean Salmon Patties
Serves: 4 • Makes: 8 small patties or 4 large • Prep: 20 minutes • Chill: 15 minutes • Cook: 10 minutes • Total: about 45 minutes
Ingredients
For the salmon patties
1 lb salmon fillet, skin removed
1 tbsp olive oil
1 tsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika
For the patty mixture
1 cup baby spinach, chopped
1/3 cup crumbled feta
1/4 cup finely chopped red onion or shallot
2 tbsp chopped parsley or dill
1 garlic clove, minced
1/2 cup breadcrumbs or panko
1 large egg
2 tbsp mayonnaise or Greek yogurt
1 tsp Dijon mustard
Zest of 1/2 lemon
For coating and frying
1/2 cup breadcrumbs or panko, for the outside
2 to 3 tbsp olive oil
Optional yogurt sauce
1/2 cup Greek yogurt
1 tbsp lemon juice
1 tbsp chopped dill or parsley
1 small garlic clove, grated
Pinch of salt
Instructions
1. Cook the salmon
Cut the salmon into a few large pieces.
Season with olive oil, lemon juice, salt, pepper, garlic powder, and paprika.
Pan-sear over medium heat for 2–3 minutes per side, just until cooked through, or bake at 400°F (200°C) for 8–10 minutes.
Let cool slightly, then flake into chunks.
2. Make the mixture
In a large bowl, combine flaked salmon, chopped spinach, feta, red onion, herbs, garlic, breadcrumbs, egg, mayo or yogurt, Dijon, and lemon zest.
Mix gently until everything holds together. Try not to mash the salmon too much.
3. Shape
Form into 8 small patties or 4 larger ones.
Coat the outside lightly with the extra breadcrumbs.
Chill for 15 minutes so they firm up and hold their shape.
4. Cook the patties
Heat 2–3 tbsp olive oil in a skillet over medium heat.
Cook the patties for 3–4 minutes per side until golden brown and crisp on the outside.
5. Make the sauce
Stir together Greek yogurt, lemon juice, herbs, garlic, and a pinch of salt.
6. Serve
Serve the salmon patties hot with the yogurt sauce, lemon wedges, and a salad or roasted vegetables.
Tips
Use fresh salmon for the best texture, but well-drained canned salmon also works.
Chop the spinach fairly small so the patties hold together better.
If the mixture feels too wet, add 1–2 more tablespoons breadcrumbs.
Chill before frying - it makes a big difference.
Easy variations
Add chopped sun-dried tomatoes or olives for more Mediterranean flavor.
Swap feta for goat cheese.
Use cilantro and a little cumin for a different twist.
