@HistoricHub Probably Epicure, the dish is Poularde de Bresse en vessie, an Escoffier-era dish popularised by Paul Bocuse. There’s a great Bourdain program where he eats this with Bocuse. de Bresse is probably the finest chicken in the world, and stuffed with foie gras and truffle.
