Do you know how farmers store their apples over winter?

Apples are sealed in an environment that is about 3% oxygen, where the farmers control temperature, humidity, nitrogen and carbon dioxide. This makes the perfect room for their long winter nap!

[WO Food Service @wofdsvc]

We had the opportunity to take a tour of Gavin Orchards this morning to learn more about picking, sorting, processing and storing of our local foods. We purchase apples and squash from Gavin Orchards for our lunch program here at West Ottawa!
