Method
Cook the pasta:
Boil fettuccine in salted water until al dente. Reserve ½ cup pasta water, then drain.
Sear the steak:
Pat steak dry and season with salt, pepper, and Italian seasoning. Heat olive oil in a hot skillet and sear for about 3–4 minutes per side, depending on thickness and desired doneness. Rest for 5–10 minutes, then slice.
Cook the mushrooms:
In the same skillet, add 1 tbsp butter and sauté mushrooms until golden and tender.
Make the garlic butter sauce:
Lower the heat. Add the remaining butter and garlic. Cook for about 30 seconds until fragrant.
Pour in the cream and simmer gently for 2–3 minutes. Stir in Parmesan until smooth. Add a little reserved pasta water until the sauce reaches a silky consistency.
Combine:
Toss the fettuccine through the sauce until beautifully coated.

¼ teaspoon freshly ground black pepper, or to taste
2 tablespoons olive oil
Creamy Mushroom Sauce
2 tablespoons unsalted butter
340 g cremini or button mushrooms, sliced
1 small shallot, finely chopped
3 garlic cloves, minced
1 teaspoon fresh thyme leaves, or ½ teaspoon dried thyme
180 ml chicken broth
180 ml heavy cream
1 teaspoon Dijon mustard, optional
¼ cup (25–30 g) finely grated Parmesan cheese, optional
2 tablespoons fresh parsley, chopped
Method
Prepare the chicken: Pat the chicken dry with paper towels. Season both sides evenly with salt and black pepper.
Sear the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 74°C (165°F). Transfer the chicken to a plate and set aside.

2 tbsp olive oil
1½ tsp salt, divided

2 tbsp all-purpose flour, optional
For the vegetables:
1 large onion, finely chopped
4 garlic cloves, minced
250–300 g mushrooms, halved or quartered
3 medium carrots, cut into large chunks
500 g baby potatoes, halved
2–3 ripe tomatoes, cut into wedges
1 cup broccoli florets
1 tbsp tomato paste
For the braising liquid:
2 cups (480 ml) beef stock
½ cup (120 ml) red wine or additional beef stock
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves

Detailed Method
1. Prepare the beef:
Pat the beef pieces thoroughly dry with paper towels. This is important because dry beef will brown much better.
Season with 1 teaspoon salt, black pepper, and smoked paprika. If using flour, toss the beef lightly in the flour and shake off any excess.
2. Brown the beef:
Heat a large heavy-bottomed Dutch oven or oven-safe pot over medium-high heat.
Add the olive oil. When hot, add the beef in batches, making sure not to overcrowd the pot.
Sear for about 2–3 minutes per side, until the beef develops a deep brown crust.
Transfer the browned beef to a plate.
Tip:
Don't rush this step. The browned bits left on the bottom of the pot are what give the finished braise its wonderful depth of flavor.
3. Sauté the mushrooms:
Add the mushrooms to the same pot. Cook for 4–5 minutes, stirring occasionally, until nicely browned.
Remove a few mushrooms and reserve them for later if you want some to retain their shape and texture.
4. Build the aromatic base:
Add the chopped onion to the pot and cook for 4–5 minutes, until softened and lightly golden.
Add the garlic and cook for another 30–60 seconds.
Stir in the tomato paste and cook for 1–2 minutes. This caramelizes the tomato paste and creates a richer flavor.
5. Deglaze the pot:
Pour in the red wine, if using.
Using a wooden spoon, scrape the bottom of the pot thoroughly to loosen all the browned pieces.
Allow the wine to simmer for 2–3 minutes.
If you don't want to use wine, simply use an additional ½ cup of beef stock.
6. Begin the braise:
Return the browned beef to the pot.
Add:
Beef stock
Worcestershire sauce
Thyme
Rosemary
Bay leaves
Remaining smoked paprika
Stir gently.
The liquid should come approximately halfway up the beef, rather than completely covering it.
Bring everything to a gentle simmer.
7. Add the potatoes and carrots:
Add the potatoes and carrots around the beef.
Cover the pot with a tight-fitting lid.
Oven method:
Transfer the covered pot to a preheated 325°F (165°C) oven.
Cook for approximately 2–2½ hours.
After about 1½ hours, check the liquid level and gently stir the stew. Add a little more stock if necessary.
The beef is ready when it can be easily pierced with a fork and is almost falling apart.
8. Add the tomatoes and broccoli:
About 20–25 minutes before the end of cooking, add the tomato wedges and broccoli.
This keeps the vegetables from becoming completely mushy while allowing them to absorb the braising sauce.
Return the lid and continue cooking.
9. Finish the sauce:
Remove the pot from the oven and discard the bay leaves.
Taste the sauce and adjust the seasoning with salt and freshly ground black pepper.
For an especially silky finish, stir in 1 tablespoon of butter.
If the sauce is thinner than you prefer, place the pot uncovered on the stovetop and simmer gently for 5–10 minutes until slightly reduced.
10. Garnish:
