@Stutheeditor @frangla My late mother hailed from Lancashire, moved to north London where she found it hard to buy tripe. She found a source in Belsize Park. A fellow Lancastrian, her greengrocer, became her supplier. She poached the tripe in milk. Up here, roast udder is sold at Doncaster Market
