Chef Bertrand Grébaut of Septime in Paris has passed away. #septime
His restaurant had long been on my mind, and I had been following it on Instagram.
Last year, a message arrived from that very account, and he came to visit Pasania.
I could hardly believe it — a chef I had admired for so long, sitting at my own counter, while I poured him Japanese wine and served him our food.
And of course, I asked him to sign my treasured copy of the Septime book.
I promised I would be sure to reach out whenever I came to Paris. I never imagined our farewell would take this form.
I will never forget the honor of his visit to Pasania, or the precious time we shared. He was a man of remarkable humility and immeasurable talent.
Chef, thank you for everything.
