The ingredients for the cheesecake:
• 600 grams of farmer's cheese (twaróg) or cottage cheese OR for babushka version 2 litres whole milk + pinch of salt + half a lemon juiced
• 1 cup sugar or honey or maple syrup (when using honey or maple syrup you’ll need some potato starch (babushka version) or coco flour (Peaty version) to make the cake firmer
• 4 large eggs
• Vanilla extract
• 1/3 cup (75 grams) butter + some to grease the baking dish
• 1 Tbsp lemon juice (optional)
• Pinch of good-quality salt
For the jelly/jello (optional):
• 1 cup (unpasteurised) cherry juice OR 1 cup of orange juice or lemon juice or lime juice or whatever flavour juice you fancy
• 3 Tbsp grass-fed gelatine powder
• 3 Tbsp honey or maple syrup
Babushka method: Make your farmer's cheese using milk
Step 1. Pour milk into a large pot, then stir in salt. Bring to a boil over medium heat, stirring occasionally to prevent milk from scorching on the bottom of the pot.
Step 2. When milk begins to boil (small bubbles will first appear at the edges), turn off the heat. Stir in lemon juice. Milk will curdle; you may need to wait 5 to 10 minutes.
Step 3. Line a sieve or colander with a cheesecloth. Pour milk through the cloth to catch the curds. Gather cheesecloth around the cheese and squeeze out as much liquid (whey) as you can. What is left in the cheesecloth is farmer's cheese.
Cheesecake method:
1. Preheat your oven to 325°F (163°C) and grease a 9-inch (23 cm) pie dish.
2. In a blender or food processor, blend 600 grams of the farmer's cheese (twaróg) or cottage cheese or the babushka cheese you just made until smooth.
3. Add sugar, eggs, vanilla extract, melted butter, lemon juice, and a pinch of salt to the blended farmers/cottage/babushka cheese. Blend until well combined.
4. Pour the mixture into the greased pie dish.
5. Bake for about 45-50 minutes or until the edges are set and the center is slightly jiggly.
6. Allow the cheesecake to cool completely before refrigerating for at least 4 hours or overnight.
Jelly/jello layer:
1. In a small saucepan, warm half of the juice over low heat. Add honey and stir until it dissolves.
2. In a separate bowl, sprinkle gelatine powder over the remaining cold juice and let it sit for a minute to bloom.
3. Add the bloomed gelatine mixture to the warm juice and honey mixture. Stir continuously over low heat until the gelatine completely dissolves. Ensure there are no lumps.
4. Remove the mixture from heat and let it cool slightly.
5. Gently pour the gelatine mixture over the chilled cheesecake layer.
6. Place the cheesecake back in the refrigerator and let it set for at least 4 hours or until the jelly layer is fully set, ideally overnight.

Beef Stew
Take a 3 lb chuck and cut it into cubes, season with salt & pepper, then sear on all sides
Reduce heat to medium low, then add 1 large diced yellow onion and saute for 5 minutes, then add 4 cloves of garlic and saute for 1 minute
Make sure to scrape any fond off the bottom of the pan, and use a splash of broth or wine to help it release if necessary
Add to crock pot with:
1 cup red wine
4 cups beef broth (10x better with homemade broth)
2 tbsp Worcestershire Sauce
3 tbsp Tomato Paste
5 medium carrots
1 lb Yukon gold potatoes
2 bay leaves
1 sprig rosemary
1 thyme sprig
Cook on low for 6-8 hours or high for 3-4 hours, until the meat is tender
Optional: To thicken, combine ¼ cup COLD water with 3 tbsp of cornstarch or arrowroot starch. Slowly add it to the stew, stirring to incorporate.
Turn off the heat. Swirl in 2 tablespoons of cold butter for a smooth, velvety finish.
