Oxford Puddings
Take ยผ lb grated biscuits & the same
of currants, the same of suet shred small, 1/2
lge spoon of powdered sugar, little salt &
1 grated nutmeg. mix with
2 egg yolks, into the size of egg
Fry in fine brown in butter. sauce
melt butter white wine & sugar
when cool add
the beaten eggs and juice of lemons, or
you may bake with only the yolks
in the mixture, pile the beaten
whites on the pies after they are baked
and return to the oven to brown.
(This quantity makes 3 pies and
good ones too)
Lemon Pie
Grate the outside peel and squeeze the
juice of 3 lemons, 3 dessertsp butter,
3 cups sugar, 3 cups water, 3 eggs.
Mix butter and sugar well together
Boil the water and thicken with 4 or 5
tablesp cornstarch pour boiling hot
on the butter and sugar......
