A week’s worth of work at @AdmiralMaltings condensed into 1 minute. Steeping, spreading, turning, sprouting, loading, kilning, and packaging. Floor malting is laborious but we love what we do and the quality of the finished product speaks for itself.
Nick Impellitteri of The Yeast Bay runs a boutique microbiology lab supplying the beer industry with a wide variety of yeasts + bacteria. Most of his production is housed at perhaps the biggest name in craft yeast: White Labs in San Diego.

@CollinMcDonnell I think you’re right... but, anecdotally, there are brewers I’ve observed that have done surprisingly well during COVID because they were able to strike the perfect balance of taproom to distro sales before... and were then able to reallocate quickly. Don’t make me say pivot.
