Apple may infer your gender based on your account information, along with with your birth year and location.
To view your gender Settings->Privacy & Security->Apple Advertising->View Ad Targeting Information - which also provides a link to Update your gender.

These are called "Sets" - there's a new menu item to remove a window from a Set too:

Press & Hold Shift while clicking on an App in the sidebar on Stage Manager to add its window to the current window without dragging.
