Feta and Cranberry Chickpeas with Lemon Vinaigrette

Ingredients
For the Chickpeas:
2 cans (15 oz each) chickpeas, drained, rinsed, and patted dry
2 tbsp olive oil
1 tsp smoked paprika
½ tsp ground cumin
½ tsp garlic powder
Salt and black pepper, to taste
For the Lemon Vinaigrette:
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
1 clove garlic, minced
½ tsp honey
Salt and black pepper, to taste
For Assembly:
½ cup dried cranberries
4 oz (115g) feta cheese, crumbled
¼ cup red onion, finely diced
¼ cup fresh parsley, chopped
2 tbsp fresh dill, chopped
Fresh dill sprigs, for garnish
Instructions
Crisp the chickpeas. Heat olive oil in a large skillet over medium-high heat. Add chickpeas in a single layer (work in batches if needed). Cook 8–10 minutes, shaking the pan occasionally, until golden and slightly crisp on the outside. Season with smoked paprika, cumin, garlic powder, salt, and pepper. Toss to coat. Remove from heat and let cool slightly.
Make the vinaigrette. Whisk olive oil, lemon juice, lemon zest, Dijon mustard, garlic, honey, salt, and pepper together until emulsified.
Assemble. In a large bowl, combine warm chickpeas, dried cranberries, red onion, parsley, and dill. Drizzle with lemon vinaigrette and toss gently.
Finish. Transfer to a serving bowl. Scatter crumbled feta generously over the top. Garnish with fresh dill sprigs and an extra crack of black pepper.
Serve. Best enjoyed slightly warm or at room temperature.
Tips
Dry chickpeas thoroughly before frying — moisture makes them steam instead of crisp.
Warm chickpeas absorb dressing better than cold, so toss while still slightly warm.
Don't skip the lemon zest — it adds brightness that juice alone can't deliver.
Variations
Add toasted walnuts or pistachios for crunch.
Swap dried cranberries for pomegranate arils when in season.
Make it a full meal by serving over arugula or mixed greens.
