They went on a mission to make stock that's actually veg, not just loads of salt. Maybe buy some and see 🙂

We have been doing this for years now, and often don’t use a recipe but if you are looking for a book @BreadMatters is the best in my view. @scotlandbread is also worth a follow. 3/3
@jancornelissen6 @jancornelissen6, hello. I am aware of WGA being bracketed with ATIs as potential toxins, although they also seem to have some anti-tumour properties. I too can't find anything on the effect of low pH & LAB fermentation on WGA. I have asked a Swedish friend and will let you know.
