Roasted Peach & Pistachio Salad with Honey Ricotta

Ingredients
For the Salad
3 ripe peaches, halved and pitted
4 cups arugula
1/3 cup pistachios, chopped
1/3 cup ricotta cheese
1 tablespoon olive oil
Salt and black pepper, to taste
For the Honey Ricotta
1 cup ricotta cheese
1 tablespoon honey
1 teaspoon lemon zest
For the Dressing
2 tablespoons honey or hot honey
1 tablespoon olive oil
1 tablespoon balsamic glaze or lemon juice
Pinch of chili flakes (optional)

Instructions
Preheat oven to 425°F (220°C).
Place peach halves on a baking sheet and drizzle with olive oil.
Roast for 15–18 minutes until softened and lightly caramelized.
In a small bowl, mix ricotta, honey, and lemon zest until creamy.
In another bowl, whisk together honey, olive oil, balsamic glaze, and chili flakes.
Arrange arugula on a serving platter.
Add roasted peaches on top.
Spoon dollops of honey ricotta around the salad.
Sprinkle with chopped pistachios.
Drizzle dressing over everything and season lightly with salt and pepper.
