HERBED PORK AND AUTUMN VEGETABLE ROAST 🍖🥕🥔🌿
"Cozy autumn flavors in every bite"
Ingredients
For the pork:
1–1.2 kg boneless pork loin or pork roast
2 tbsp olive oil
4 garlic cloves, minced
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme leaves
1 tsp dried sage
1 tsp paprika
1½ tsp salt
1 tsp freshly ground black pepper
1 tbsp Dijon mustard
1 tbsp honey or maple syrup
1 tbsp lemon juice
For the autumn vegetables
500 g baby potatoes, halved
2 large carrots, cut into chunks
300 g butternut squash, cut into cubes
200 g Brussels sprouts, halved
1 red onion, cut into wedges
5–6 garlic cloves, lightly crushed
2 tbsp olive oil
1 tsp dried thyme
½ tsp rosemary
Salt and black pepper, to taste
For the pan juices
½ cup chicken or vegetable stock
1 tbsp butter
1 tsp Dijon mustard
1 tsp honey or maple syrup
Method
1. Prepare the pork:
Take the pork out of the refrigerator about 30 minutes before cooking. Pat it dry with paper towels.
In a small bowl, combine olive oil, garlic, rosemary, thyme, sage, paprika, salt, pepper, Dijon mustard, honey and lemon juice.
Rub the mixture generously all over the pork, making sure the seasoning coats every side.
2. Prepare the vegetables:
Preheat the oven to 200°C (400°F).
Place the potatoes, carrots, squash, Brussels sprouts, red onion and crushed garlic in a large roasting dish.
Drizzle with olive oil and sprinkle with thyme, rosemary, salt and pepper. Toss well to coat.
Spread the vegetables around the dish, leaving space in the center for the pork.
3. Sear the pork:
Heat a large oven-safe skillet over medium-high heat. Add a little olive oil and sear the pork for 2–3 minutes on each side, until nicely browned.
This gives the roast a delicious caramelized crust.
4. Roast:
Place the browned pork in the center of the vegetables.
Pour the stock into the bottom of the roasting dish, avoiding pouring it directly over the seasoned pork.
Roast uncovered for approximately 45–65 minutes, depending on the size and thickness of the pork.
For the best result, use a meat thermometer. The thickest part of the pork should reach 63°C (145°F), followed by at least a 3-minute rest.
If the vegetables become too dark before the pork is ready, loosely cover the dish with foil.
5. Make the pan juices:
Transfer the cooked pork to a cutting board and cover loosely with foil.
Place the roasting pan over medium heat if it is stovetop-safe. Add the butter and stir the juices together.
For a slightly sweeter, richer finish, stir in Dijon mustard and honey or maple syrup. Simmer for 2–3 minutes until slightly thickened.
6. Rest and slice:
Allow the pork to rest for 10–15 minutes before slicing. This helps keep the meat juicy.
Slice the pork into thick pieces and arrange them over the roasted vegetables.
Spoon some of the flavorful pan juices over the pork and vegetables.
Serving:
Garnish with fresh rosemary and thyme and serve hot with:
Extra roasted garlic
A crisp green salad
Homemade gravy
Crusty bread
Apple or cranberry sauce
Tip:
Don't overcrowd the roasting dish. Giving the vegetables enough space allows them to roast and caramelize rather than steam.🍖🥕🥔🌿
Cheesy Beef Fettuccine
Serves: 4

Ingredients
Pasta
- 340 g fettuccine or linguine
- Salt, for the pasta water
- 250 ml reserved pasta water
Beef Sauce
- 450 g ground beef
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 tablespoons butter
- 1 tablespoon tomato paste, optional
- 1 teaspoon Italian seasoning
- ½ teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- 180 ml beef stock
Cream & Cheese
- 150–180 ml heavy cream
- 50 g grated Parmesan cheese
- 150–200 g shredded mozzarella cheese
Garnish
- 2 tablespoons fresh parsley, chopped
- Additional freshly ground black pepper
Method
1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the fettuccine until just shy of al dente, according to the package instructions. Reserve 250 ml of the pasta water, then drain.
2. Brown the beef: Heat a large, deep skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart as it cooks. Add the onion and cook for 3–4 minutes until softened. Drain excess fat if necessary.
3. Build the flavour: Add the garlic, tomato paste, Italian seasoning, salt, and black pepper. Cook for 1 minute, stirring continuously.
4. Make the sauce: Add the butter and stir until melted. Pour in the beef stock and cream. Bring to a gentle simmer and cook for 2–3 minutes until the sauce begins to thicken.
5. Combine with pasta: Add the drained pasta and Parmesan. Toss thoroughly until the noodles are coated in the sauce. Add reserved pasta water a little at a time until the sauce reaches a smooth, creamy consistency.
6. Add the mozzarella: Taste and adjust the seasoning, adding extra black pepper if desired. Sprinkle the mozzarella evenly over the pasta.
7. Melt the cheese: Cover the skillet and cook over low heat for 2–3 minutes, until the mozzarella is melted and stretchy. Alternatively, place the skillet under a broiler briefly until the cheese is golden and bubbling.
8. Garnish and serve: Finish with chopped parsley and freshly cracked black pepper. Serve immediately while hot and creamy.
Chef's Notes
- Pasta water: The starch in reserved pasta water helps emulsify the sauce and gives it a smoother consistency.
- Cheese: Mozzarella provides the stretch, while Parmesan adds savoury depth.
- Beef: An 80–90% lean ground beef works well, providing flavour without making the sauce excessively greasy.
- Consistency: The sauce should coat the pasta generously without becoming overly thick. Add a splash of pasta water if it tightens while standing.

SAVORY BEEF & GARLIC BUTTER RICE 🍚🧄🍖
"Rich, savory, and full of garlic-butter goodness"
Ingredients
For the beef:
500 g beef steak or tender beef, thinly sliced
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp Worcestershire sauce
1 tsp honey or brown sugar
1 tsp freshly ground black pepper
½ tsp paprika
½ tsp chili flakes, optional
1 tbsp cooking oil
For the garlic butter rice:
2 cups long-grain or basmati rice
3 cups water or beef stock
3 tbsp butter
5–6 garlic cloves, finely minced
½ small onion, finely chopped
½ tsp salt, or to taste
½ tsp black pepper
1 tbsp chopped fresh parsley
For finishing:
2 tbsp butter
2–3 garlic cloves, thinly sliced
1 tbsp chopped parsley
Chili flakes
Freshly cracked black pepper
Lemon wedges
Method
1. Marinate the beef:
Place the sliced beef in a bowl. Add soy sauce, oyster sauce, Worcestershire sauce, honey, black pepper, paprika and chili flakes. Mix well and let it marinate for 20–30 minutes.
2. Prepare the rice:
Rinse the rice until the water runs mostly clear. Melt 3 tablespoons of butter in a saucepan over medium heat. Add the chopped onion and cook for 2–3 minutes until softened.
Add the minced garlic and cook for about 30 seconds, just until fragrant.
Add the rinsed rice and stir for 1–2 minutes so the grains become lightly coated in the garlic butter.
Pour in the water or beef stock. Add salt and black pepper. Bring to a boil, then reduce the heat to low. Cover and cook for 15–18 minutes, or until the rice is tender and the liquid has been absorbed.
Turn off the heat and let the rice rest, covered, for 5–10 minutes. Fluff gently with a fork and stir through the chopped parsley.
3. Cook the beef:
Heat a large skillet or frying pan over high heat. Add the cooking oil.
Add the beef in a single layer, working in batches if necessary so the pan doesn't become crowded. Sear for about 2–3 minutes per side, depending on the thickness and desired doneness.
Remove the beef and let it rest briefly.
4. Make the garlic-butter finish:
Reduce the heat to medium. Add 2 tablespoons of butter to the same pan.
Add the sliced garlic and cook for about 30–60 seconds, stirring constantly, until lightly golden and fragrant. Be careful not to burn it.
Return the beef to the pan and toss everything together for another minute, allowing the garlic butter and pan juices to coat the meat.
To Serve:
Spoon the warm garlic-butter rice onto a large serving plate. Arrange the savory beef generously over the top.
Finish with the golden garlic slices, fresh parsley, cracked black pepper and a sprinkle of chili flakes. Add a squeeze of fresh lemon just before serving if you like a little brightness.
Serve immediately with a simple green salad, steamed vegetables or roasted broccoli.
Tip:
For especially tender beef, slice it thinly against the grain and avoid overcrowding the pan. A very hot skillet gives the beef a beautiful browned crust while keeping the inside juicy.🍚🧄🍖
MOROCCAN SPICED LAMB & GOLDEN AROMATIC RICE 🍖🍚

Serves: 4
Ingredients
For the lamb:
800 g lamb shoulder or lamb leg, cut into large pieces
2 tbsp olive oil
1 onion, finely sliced
4 garlic cloves, minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
½ tsp ground cinnamon
½ tsp turmeric
½ tsp ground ginger
¼ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
400 ml chicken or lamb stock
2 tbsp tomato paste
100 g dried apricots, halved
50 g raisins
1 cinnamon stick
2 tbsp chopped fresh cilantro or parsley
For the golden rice:
2 cups basmati rice
3 cups chicken stock or water
1 tbsp butter or olive oil
½ onion, finely chopped
1 tsp turmeric
½ tsp cumin
½ tsp cinnamon
¼ tsp saffron, optional
½ tsp salt
50 g toasted almonds
2 tbsp raisins
Fresh cilantro or parsley, to garnish
Method
1. Season the lamb:
Combine cumin, coriander, paprika, cinnamon, turmeric, ginger, cayenne, salt and pepper. Rub the spice mixture thoroughly over the lamb.
2. Brown the lamb:
Heat olive oil in a heavy pot over medium-high heat. Brown the lamb pieces in batches for 2–3 minutes per side. Transfer to a plate.
3. Build the Moroccan sauce:
Reduce the heat to medium. Add the onion and cook for 4–5 minutes until softened. Add garlic and tomato paste and cook for another minute.
Return the lamb to the pot. Add the stock and cinnamon stick. Bring to a gentle simmer.
Cover and cook for 1½–2 hours, or until the lamb is very tender.
4. Add the fruit:
Add the dried apricots and raisins during the final 20–25 minutes of cooking. Allow the sauce to reduce until rich and slightly glossy.
5. Prepare the golden rice:
Rinse the basmati rice until the water runs mostly clear.
Heat butter or olive oil in a saucepan. Add onion and cook until soft. Stir in turmeric, cumin and cinnamon.
Add the rice and stir for 1–2 minutes. Pour in the stock, add salt and saffron if using, and bring to a boil.
Reduce heat to low, cover and cook for 15–18 minutes. Turn off the heat and let it rest, covered, for 10 minutes. Fluff gently with a fork.
6. Finish and serve:
Spoon the golden rice onto a large serving platter. Arrange the tender Moroccan lamb over the rice and spoon the fragrant sauce around it.
Scatter over toasted almonds, raisins and plenty of fresh cilantro or parsley.
Optional finish:
Add a few extra dried apricots, toasted almonds and a light drizzle of honey for a beautiful sweet-and-savory Moroccan touch.🍖🍚
Homemade taco seasoning recipe (cheaper and better than anything at a supermarket):
4 tsp chili powder
3 tsp cumin
1 tsp paprika
1 tsp crushed red pepper
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
1/2 tsp black pepper
This is enough for around 2 pounds of meat. For 1 pound cut in half
You can also scale it up and make a huge batch to keep on hand
4-Ingredient Artisan Bread | Crispy Crust, Soft Inside
Ingredients:
3½ cups bread flour or all-purpose flour (approximately 420 g)
1 packet instant yeast (7 g / 2¼ teaspoons)
2 teaspoons salt (approximately 12 g fine salt)
1½ cups lukewarm water (355 g / 355 ml)
Instructions:
Mix the flour, instant yeast, and salt in a large bowl. Add the lukewarm water and stir until all the flour is incorporated and a sticky, rough dough forms.
Cover and let rise for about 2 hours, or until doubled. Alternatively, cover the freshly mixed dough and refrigerate overnight.
Preheat the oven to 450°F (230°C). Place a covered, oven-safe Dutch oven inside to heat for about 30 minutes.
Lightly flour your hands. Stretch one side of the risen dough and fold it over itself. Rotate the bowl 90 degrees and repeat 5–6 more times. Pinch the seams together in the center to form a round ball.
Turn the dough onto lightly floured parchment. Lightly dust the top with flour, cover loosely, and rest for 20 minutes.
Carefully lower the dough and parchment into the hot Dutch oven. Cover and bake for 30 minutes.
Remove the lid and bake for another 15 minutes, until golden brown.
Carefully lift out the bread using the parchment and let cool completely on a wire rack before slicing.

Do not only provide for your children. Pray for them.
Do not only worry about their future. Commit their future to God.
Do not wait until they are in trouble before you begin praying.
Be intentional.
And if you do not have children yet, you can still pray ahead of them. Pray for the children you are trusting God for. Pray for their salvation, protection, purity, purpose, future spouses, families, and their walk with Jesus.
