I was an active duty firefighter/EMT on 9-11. For years prior, mom regularly told me how proud she was of my service. That changed after she asked if I would have gone into the towers were I in NY. I said yes, of course. Mom then said she wished I stopped being a firefighter.
I used to hack away at dinner with my signature chopping style: slow, inconsistent, and definitely not pretty.
Last night I took a knife skills class. Leveled up. Learned how to hold a chef’s knife like I mean it.🔪

Wawa on Wednesday!
Special because pre- retirement, I couldn’t have dreamed of casually visiting a Wawa on a Wednesday afternoon, since there are no Wawa’s where I live, and I would’ve been in the classroom anyway. There’s wine too!

Back when I fought fire, we'd get outdoor fires in our coverage area from time to time. When needed, helicopter support was impressive. Given the size of area they are trying to cover, their impact looks pretty small. But the ground they hit is actually big and gets soaked.
Today's 4th of July could have easily been a lot different if people like this didn't spend their 4th of July's in places like this over the past 200+ years.
Memorial Day: Each soul lost had parents, grandparents, family, and friends. Many left spouses and lovers. Often they left children.
Each had a life ahead.
Each had a life they left.
For an ideal, a nation.
For you, for me. For all.
For this, we remain eternally grateful.
@investing_law Seeing this at restaurants a lot now, including at the high end (where, apparently, $25 for a martini and $85 for the rib eye isn't enough to cover those things anymore).
The biz owners that do this don't realize how off-putting this is to their potential patrons.
Old guy pro tip: Keep seeing these types of laments from younger people. They can’t relax on vacation, etc.
Go easy on yourself about this. When always on, it’s hard to idly let the time pass or go play. It’s okay. You’re taking time to sharpen the saw. That’s important too.
Everyone has something. A deep secret, addiction, fear or weirdness to them.
First heard that years ago, when learning how to teach young EMT candidates about psychological emergencies.
It’s a way to humanize patients to care givers.

Going to make apricot and pear jams today to have during charcuterie nights. Probably making cherry jam tomorrow. I do cherry vanilla and cherry almond. Jam is great added to plain yogurt.
Have some apricots and pears in the 'fridge. Going to make a jam out of each this weekend.
Never tried a pear jam before. But a dollop of "John's Apricot Jam" on the plate goes great with the cheeses we have on charcuterie night! (Wine too, of course)
