My son wanted beef bits in his pancakes. Why not!
It was delicious with the forest honey drizzled on top.
Carnivore pancake made with eggs, gelatin, and collagen. I used to love making everything sourdough, but it didn’t love me. I am not a carnivore who thinks everyone else needs to be. It helped us clear up health issues, but I think it’s best to eat whatever helps you thrive.
Carnivore Pancakes!
INGREDIENTS:
Chicken eggs
Salt
Beef gelatin
Beef collagen (optional)
Lemon juice (optional)
I actually usually make this with 16 eggs and 4 TBSP gelatin for a family breakfast. Four eggs and 1 TBSP gelatin would be a nice way to try the recipe and see if you like it. It is a simple 4:1 ratio for eggs to gelatin. All other ingredients are flexible. Below, are the instructions for a dozen chicken eggs.
Note: with duck eggs, you would cut the number of eggs in half. The resulting pancake will be much less fluffy as duck whites don’t hold as well.
DIRECTIONS:
Separate egg whites and yokes into two different bowls.
Add 1/2 tsp salt to whites and whisk in.
Slowly sprinkle in 3 TBSP gelatin while whisking. Make sure gelatin is all mixed in (scrape in lumps that form in the sides of the bowl).
Slowly drizzle in 1 TBSP lemon juice while whisking. This stage is optional. I find the lemon juice gives it a nice sourdough-like tang.
Whisk until stiff peaks form.
In a separate bowl mix the yokes with collagen. If you want a sweetness, you can add honey to this mix. I would be careful with other sugars, as the pancakes will easily burn. That said, if you like a little crisp on the outside, you can add maple syrup or coconut sugar to the yokes - just watch very carefully while frying.
Fold yokes into whites.
Fry in tallow, ghee, or butter.
Serve with whatever toppings you like! Whipped cream and berries are a delicious option. I often melt honey and butter together to make a sauce to drizzle on top.

Why can’t these people ever talk about the real environmental issues? Like the topsoil crisis we’re facing. Regenerative grazing versus feedlots, where cows are crammed together, pumped full of antibiotics, and fed grain instead of grass. In regenerative systems, cows drink water and eat grass, then urinate and defecate it right back into the soil, building topsoil and feeding the ecosystem. Meanwhile, monocropping mixes water with harmful chemicals, destroys the soil, and wipes out entire ecosystems. And health-wise, plant-based diets often have poor nutrient bioavailability, anti-nutrients that block absorption, and that whole fiber thing is way overhyped. Eating nose-to-tail from well-raised animals gives you the complete set of bioavailable vitamins and minerals you actually need. The contrast is night and day.
