We’ve taken a 90-day dry-aged rib cap and braised beef tendon and given it a familiar yet different approach — PHO BEEF CARPACCIO w/ cilantro, basil, bean sprout, pickled chili and finished with a house-made hot pho demi glacé and topped with crispy rice noodles!

Cooked with "Poulet en Vessie" in mind, our 𝗧𝗿𝘂𝗳𝗳𝗹𝗲 𝗛𝗮𝗶𝗻𝗮𝗻𝗲𝘀𝗲 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 is the perfect marriage of classic French technique and Asian tradition.
Cooked sous vide and served with duck fat rice, scallion ginger sauce and confit garlic sambal.
