Mexican Beef Rice Skillet
Ingredients:
- 1 lb ground beef, 80/20 or 85/15
- 1 medium onion, diced
- 2 garlic cloves, minced
- 10 oz can Rotel diced tomatoes and green chilis (original)
- 1 can black beans, drained and rinsed
- 1 cup corn, rinsed (frozen or canned)
- ¾ cup jasmine rice, rinsed and drained
- 2 cups low-sodium chicken stock
- 1 Tbsp olive oil
- 4 Tbsp taco seasoning
- ½ tsp fine sea salt, or to taste
- 2 cups Mexican cheese blend (Colby jack or equal parts mozzarella and cheddar)
Instructions:
1. Cook ground beef: Heat olive oil in a large skillet over medium heat. Add ground beef and sauté, breaking apart with a spatula, until no longer pink, about 3 minutes.
2. Sauté onion and garlic: Add diced onion and cook until softened, 3 to 4 minutes. Stir in minced garlic and cook for 30 seconds until fragrant.
3. Season mixture: Incorporate taco seasoning and stir to combine evenly with the beef and vegetables.
4. Add vegetables and rice: Stir in diced tomatoes with juices, black beans, corn, and jasmine rice until evenly distributed.
5. Simmer ingredients: Pour in chicken stock and sea salt, then bring to a gentle boil. Reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes or until rice is tender.
6. Melt cheese: Remove skillet from heat, uncover, sprinkle cheese over the top, cover again, and let rest 5 minutes until cheese is melted.
7. Serve with toppings: Garnish with fresh cilantro and serve with preferred taco toppings such as diced avocado, sour cream, or salsa.
Garlic Parmesan Cheeseburger Bombs
Servings: 12 bombs

Ingredients
For the Filling:
1 lb (450g) ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 tsp Worcestershire sauce
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
1½ cups shredded cheddar cheese
4 oz (115g) cream cheese, softened
For the Dough:
1 lb (450g) pizza dough (store-bought or homemade)
1 large egg, beaten (for egg wash)
For the Garlic Parmesan Topping:
3 tbsp unsalted butter, melted
3 cloves garlic, minced
¼ cup grated Parmesan
1 tbsp fresh parsley, chopped
1 tsp sesame seeds
Pinch of salt
Instructions
Cook the filling. Heat a skillet over medium-high heat. Add ground beef and onion, cooking 5–6 minutes until beef is browned. Add garlic, Worcestershire sauce, garlic powder, salt, and pepper. Cook 1 minute more. Drain excess fat if needed.
Make it cheesy. Reduce heat to low. Stir in cream cheese until melted and combined, then fold in shredded cheddar. The mixture should be thick and scoopable. Remove from heat and let cool completely — hot filling will tear the dough.
Prep the dough. Preheat oven to 375°F (190°C). Line a baking sheet with parchment. Divide pizza dough into 12 equal balls.
Stuff. Flatten each dough ball into a 4-inch round in your palm. Place about 2 tbsp of the cooled filling in the center. Pull the edges up around the filling and pinch firmly to seal completely. Roll gently into a smooth ball with the seam down.
Arrange and wash. Place seam-side down on the baking sheet, spaced 2 inches apart. Brush each bomb all over with beaten egg.
Bake. Bake 18–22 minutes until golden brown and puffed.
Make the topping. While they bake, stir melted butter, minced garlic, Parmesan, parsley, and sesame seeds together.
Finish. Remove bombs from oven and immediately brush generously with the garlic Parmesan butter. Sprinkle with extra parsley and sesame seeds. Serve warm.
Tips
Cool the filling fully before stuffing — warm filling makes the dough soggy and hard to seal.
Pinch the seams hard — any gap and cheese leaks out during baking.
Don't overstuff — 2 tbsp is the sweet spot; more and they burst.
Variations
Swap cheddar for smoked gouda or pepper jack.
Add crumbled bacon or caramelized onions into the filling.
Serve with burger sauce, ketchup, or ranch for dipping.

Not everyone is a Gunn fan and that’s okay, but as someone who has read comics since I was 6, and literally read 10,000+ comics not exaggerating, James Gunn has a feeling to his movies that just…seem to get it better than any other director I’ve seen try to do a comic book movie. I’m not saying his movies are perfect either, but when I think comic book movie now it’s his where other directors I feel make superhero films but they don’t feel very comic booky
