I understand the cop's position, but reasonable judgement in application of the law is foundational.

Self-defense law requires the response to match the threat level in question. If someone spits in your face, you'll have an easier time explaining why you punched them as opposed to why you shot them in the face 27 times.

But you can't shoot them in self defense and then proceed to chop their head off and still be protected by the law.

This is all too hard for some to understand.
