But your body also doesn’t have a great way to regulate the absorption, so it’s easy to accumulate too much increasing oxidative stress, you can reference the Fenton reaction. There’s also foods you can pair to help mitigate.

@RHP2461@SamaHoole If that’s a concern for you, blanche, boil or steam them briefly before sautéing. Oxalates are water soluble and that will remove a good amount. Then you’ll still get the protective benefits from the spinach on heme iron.
@SamaHoole Even though I grew up in the margarine generation, glad to say it wasn’t something my family ever considered. I remember trying it at a friend’s and wondering what the heck it was. Worst bait and switch than canned peas.
