The DANDELION
Culinary uses:
FLOWER... fresh in salad, and as a garnish.
LEAVES... pesto, salad.
ROOTS... raw, in soups.
ALL PARTS... beverages in herbal infusion.

RECIPE:
Rinse 4 cups of dandelion blossoms
3-4 lemons (juiced and zested) 1
1/4-3/4 cups maple syrup or honey
8 cups of water
Put flowers into 1/2 gallon jar, add lemon juice and zest, add sweetener, and fill the rest of jar with the water. let steep all day and all night in the fridge. Optionally, strain out the flowers and serve.
