Is Trump a child or a cretin that he doesn't know what he's signing? The first clause was about Lebanon. If he could not enforce the clause he shouldn't sign the agreement. Trump's three operational rules are:
1. Never admit you're wrong
2. Blame other people.
3. Always claim victory even if you're defeated.
An agreement with such a person is impossible .
Perhaps a better reading is the Iranians thought, perhaps correctly, that the deal was too good to be true and that it was just a ruse to allow rebuilding of weapons and try to reopen Hormuz and take away leverage without offering anything concrete in return. They didn't actually get any money. And probably never would have

The last major conflict in the Persian gulf was the so called tanker wars in the 1980s between Iran and the US but it was at the Iraq Kuwait end not in the Straits however there was always the fear that Iran would close the Straits even back then. But they didn't. Problem is it's the nuclear option. That is it hurts Iran most of all but because of the integration of energy and other markets (eg fertilizer) it has an inevitable knock on effect on every one else that will play itself out in time. Not just economically but also politically, including perhaps in Iran itself but also many other countries where consumers live closer to the margins of human existence than they do in the West. Bread shortages and revolutions have often been twinned. Possibly also the US thought because it would hurt China first and foremost Iran would only do it as a final resort after it was too late and the government in Iran was almost finished.. Iran's version of the V2 rocket.
Economic warfare often causes pain to both parties. The OPEC oil embargo in 1973 hurt severely OPEC producers. Europe's embargo on Russian gas causes major pain to EU consumers. The US on the other hand appears to conduct economic warfare in the form of sanctions without significant cost to itself so it assumes others won't undertake it if it's going to be too painful to themselves. I assumed the same. Iran obviously decided to turn over the board and pull out its real nuclear option from the start and damn the consequences. As the late Senator Graham recently said, with a hint of exasperation, "I believe they are crazy".
But not too crazy. They obviously knew it would put immediate political pressure on Trump because Americans more than many people are accustomed to the luxury of cheap energy. Generally the costs of US military action are not felt by the US public. Did Iran consult with China beforehand? Maybe.. It would make sense. Analysis noted that China had been building up its stocks of oil from the Gulf for months prior with large fleets of tankers taking oil from there even before the 12 day war in 2025. So they were well obviously prepared and therefore perhaps also well briefed.

But you had to go back half a century to find it. Moreover in that period Iran and Turkey, both large Muslim countries, were both pro West. In fact Iran was the second Muslim-majority nation, after Turkey, to recognise the state of Israel in the 1950s. Iran refused to join the OPEC oil embargo after the 73 war. So the Muslim world never has been united on the issue. Arabs yes. Muslims never. Some large non arab countries like Indonesia Pakistan and Malaysia have never recognised Israel but as far as I'm aware it's been confined to diplomatic non recognition not military opposition. All three are military allies of the US
