Bog butter is a real archaeological category. There is a lump in Dublin older than the Parthenon, and the museum has a system for cataloguing them, because Ireland keeps finding more.
Hundreds of them. In firkins, in baskets, wrapped in bark, ten feet down in the peat, the oldest around seventeen hundred years before Christ. One came up in County Meath in 2016, twenty pounds of it, and the museum confirmed it was theoretically still edible and advised strongly against.
A bog is cold, airless and acid. It is why the same ground hands back faces, hair and fingerprints, and it does the same favour to fat.
What comes out is very nearly pure saturated fatty acid, which is how it sat under a field through the Roman occupation, the monasteries, the Famine and two world wars, and it is exactly what butter was condemned for in 1961.

The oil is deodorised, because refined seed oil tastes of seed and the industry says so in its own patents. It is bleached, because of the colour. It is dyed with beta-carotene, because without it a spread comes out white. Butter flavouring is added, because it has none. Vitamins A and D are added, because butter has them and this does not.
Four separate industrial steps whose only purpose is to make one thing resemble another thing.
Three thousand years of burying it in bogs, paying rent in it, building a cathedral tower on the right to eat it, and shipping it to Brazil.
