A simple weeknight pasta dish.

Pasta Cream and Bacon Recipe

Ingredients
1 (very large) serving dried pasta
1 red onion, finely diced
3-4 rashers of bacon, diced ~120ml heavy cream
50ml reserved pasta water
1 egg, whisked
Parmesan cheese, grated
Fresh coarse ground black pepper

Method
Boil the pasta in salted water until almost al dente.

Reserve some pasta water before draining.

Heat some olive oil in a pan on medium-low heat and fry the onions for 5-7 mins, until softened and golden.

Season with salt and pepper.

Add the bacon and cook with the onions for another 3-4 minutes, until everything is golden and the bacon is crispy.

Return the drained pasta to the pot then add the onion and bacon mixture, cream and a generous splash of pasta water. Stir constantly.

Remove from the heat, then stir in the egg and grate in plenty of parmesan.

Constantly stir the pasta to create a silky sauce, add more cream or pasta water if necessary.

Taste to adjust seasoning.

Serve and enjoy

High-protein, sugar-free, gluten-free Cake

Ingredients:
4 eggs, separated into whites and yolks
350 g natural yogurt
50 g rice flour
15g cornstarch
Sweetener, to taste
A pinch of citric acid or a few drops of lemon juice

Method:
Separate the egg whites from the yolks.

Whip the egg whites with a few drops of lemon juice until stiff peaks form.

In a separate bowl, mix the egg yolks, yogurt, rice flour, cornstarch and sweetener until smooth.

Gently fold the whipped egg whites into the mixture using upward folding motions to keep the batter light and airy.

Bake at 140°C for exactly 1 hour, baine Marie.

Let it cool completely before serving - this allows the texture to set and become perfect
