Industrialization was in full swing and the opening up of new agrarian markets in India and Egypt greatly diminished the value of traditional Southern cash crops while settlement of the plains provided food.

@ZachWeiner I don't think things really have changed as much as we'd like to think. We're still engaging in realpolitik, it's just that we've had a period of stability where upsetting the status quo wasn't in most people's best interests. As powers wane or grow, that will change.

1) Stress eating
2) More free time = more time to eat/prepare better and more expensive food
2b) Also more opportunity to take up new cooking hobbies
3) Focus on higher quality food due to health concerns
4) Change in shopping routine results in more spoilage
