@cofromthemo Thanks, buddy. I appreciate it. This one is bone-in. It’s 6.2 lbs and I’ve got 9 meat eating adults in total. Two of them are very light meat eaters. I think I’ll probably end up smoking a few salmon filets, just to make sure everybody is covered. Do you do a dry brine on it?
