@DanAlfaro Good question! So many would work but the key I think would be to cook them on the side and add them to your bowl vs. cooking with the soup. Probably chickpea noodles or rice would be my top alternatives to regular pasta here.
Feel like we all owe @Markgpsu a big thank you for all the work he and his team are doing researching cacao plants and how to grow cacao for chocolate. Can you imagine a world without chocolate? #FutureofFood
Can we feed the growing population and do it sustainably? Sustainable food production panel takeaways—Yes but we need to innovate, focus on reducing food waste, focus on breeding and management. #FutureofFood
Farmers should be thinking about people, profits and the planet at the same time. If you don’t think long term it’s like peeing on yourself to keep warm (one minute of relief but then you’re cold and wet and soaked in urine) paraphrasing Jason Rowntree, PhD #FutureofFood
@gourmetmetrics@AliBouzari Good question. We don’t need to but some people look for replacement for special diets or allergies, plus question of sustainability. I use and love butter but some still want something butter-like but different.
Butter...we just can’t quit you but we keep trying to change you. From partially hydrogenated oils (health issues) to palm oil (sustainability issues) to coconut oil (functionality issues) there will never be a perfect replacement @AliBouzari#FutureofFood
@Megan_Hilbert@AliBouzari@AliBouzari particularly mentioned that it didn’t always hold up in chocolate and led to blooming. I simplified his message in this tweet bc he also talked about the health implications and perceptions with coconut oil shifting and changing in recent years. Hope this helps!
Is the instant pot just a pressure cooker? Well...people think it’s safer (personally, I’ve been scared of pressure cookers since Boston Marathon bombing, but would get an IP). But what’s old is new again and we see this over and over again in food. #FutureofFood
@GEAppliancesCo makes fridges that will tell you if you left the door open or the temp goes to help keep your food safe. (Coulda saved me some $$$ a few times) #FutureofFood
Yes! Such an important point “97% of people probably don’t have the luxury to make these decisions in the first place”@AliBouzari talking about niche nutrition, food and culinary trends but they aren’t accessible or even important to a majority of people right now #FutureofFood
When asked why new food products don’t always taste good...Green juice with nothing sweet (celery, kale, ginger, cayenne) doesn’t taste good but it tastes like you’re doing the right thing—@AliBouzari#FutureofFood
Take out all the sugar...replace it with ALL the fiber and we may have a 💩problem (fiber is good but candy with 50 grams of fiber maybe not so much) @AliBouzari#FutureofFood
@FoodInsight survey—people viewed fresh produce as 3 times as healthy as frozen produce. That’s a myth we need to work on breaking down...but perception matters #FutureofFood
“Food confusion affects the majority of us. 6/10 people doubt their food choices because of conflicting information”-Joseph Clayton @FoodInsight 🤦🏻♀️work to do! #FutureofFood
