We had a great talk w/ @christinelu abt raising awareness of indigenous coffees from lesser known artisan regions like Taiwan.

Specialty terroirs are the best way to discover a culture.

Re: flavor, we found the solvent physics of water don't work super well w/ this method, but OTOH adopters tend to also use better coffees and processes with it too!

Many have asked how we brew.

Like the best cafes, we use a Voga @groundcontrl. Its unique vacuum system maximizes extraction and TDS, leaving grounds "dry" in-between water passes.

This restores water solvency and optimizes contact time with the grounds for the sweetest extractions.

The result: golden, delicate flakes vs the burnt shavings found in most retail instant coffees, where the wood pulp of the bean was literally boiled into your cup.
