Many Chinese people claim that American Chinese food is not authentic or not even Chinese, but I really don't think that's the case. I think American Chinese food is an evolutionary branch from a category of traditional Chinese banquet dishes: 小孩菜 (kid's dish, xiaohaicai)
It doesn't mean the dishes are specifically designed for kids and not adults, but that when they show up on the table, the kids will go crazy over them
The common traits are: crispy, sweet, large chunks easy to pick up with chopsticks (or hands), no bones or shells
The prototype of all kid's dishes is probably sweet and sour ribs, which could be traced back to Tang dynasty. In Qing dynasty, it evolved into the boneless sweet and sour pork, which is the paradigm of all kid's dishes afterwards
American Chinese foods are just cranking up the sugar content, and change the kid's dishes ratio from 10% of the banquet to 80% of the menu
