Prime Rib Roast salted now going into the fridge for 24 hours. The dry brine stage allows the salt to dissolve the proteins which actually allows the meat to hold onto its own moisture better during cooking. I use kosher salt for dry bringing because it doesn’t clump up. The rest to be continued.
