Ancient bread fermented for hours, sometimes overnight. Most bread you buy now goes from flour to packaged loaf in about three and a half hours. The protein in the wheat is nearly identical to a century ago. What changed is what the dough does before it hits the oven.

A USDA survey of wheat from the 1920s to today found gluten content basically flat. The dwarf varieties from the green revolution didn't load up on it. So the "modern wheat is juiced with gluten" idea doesn't survive contact with the data.

What did change is two specific things. Vital wheat gluten, a concentrated gluten powder, gets added to industrial dough to fake the structure that slow fermentation used to build, and US consumption of it has roughly tripled since 1977. At the same time, the fermentation itself got deleted. Long proofing breaks down fructans, a fast-fermenting carb in wheat, by up to 90 percent at around 4.5 hours of rise. Drop the proof to an hour and those fructans ride into the loaf intact.

That's the quiet part: most people who blame gluten are reacting to fructans instead. Fructans pull water into the gut and ferment quickly, which is the bloating and the gas. The crowd that swears they "can eat bread in Europe" are usually eating the long-fermented version that already digested its own fructans before they ever touched it.

True celiac is a separate thing, and it genuinely rose. Serum from a 1950 Air Force base compared against samples in 2006 showed celiac markers climbing from 0.2 to 0.9 percent. Close to a fivefold jump in actual immune response, not just more testing.

The grain held steady for a hundred years. The processing stripped out the slow step that made it digestible, then added concentrated gluten back in to compensate. Most people are reacting to a faster loaf. A smaller group reacts to the protein itself, for reasons still being worked out.

Barnaby told me I was about to embark on a security quest.

The first module was a video about phishing scams produced like a high-budget daytime soap opera.

The actors were inappropriately attractive for a simulated accounts payable department.

The main character, Chad, left his laptop open at a coffee shop while he ordered a matcha latte.

A guy in a black hoodie immediately sat down and downloaded the entire corporate mainframe to a USB drive in four seconds.

Then the video paused and asked me to identify Chad's critical mistake.

The multiple choice options were leaving the device unsecured, using public Wi-Fi, or failing to foster a culture of vigilance.

I clicked the first one.

Barnaby the badger popped up and told me I was technically correct, but I lacked a holistic security mindset.

He deducted 10 "synergy tokens" from my digital wallet.

I didn't even know I had a digital wallet.

The next scenario involved a complex ethical dilemma about accepting gifts from vendors.

A supplier offered the protagonist a branded corporate fleece.

The video framed this as the first step toward international corporate espionage.

I was asked if accepting the fleece was a violation of the anti-bribery statutes.

I clicked yes.

Barnaby congratulated me and awarded me a bronze digital badge of integrity.

I tried to fast-forward through the next video because it was 45 minutes long.

The player immediately froze and a warning message appeared saying Barnaby notices you are rushing.

The video restarted from the very beginning.

I sat there for 45 minutes watching a dramatization of password hygiene while staring blankly at my monitor.

At the end of the quest, I had to take a 50-question final exam.

One question asked how long a visitor badge is valid under the new global security matrix.

I guessed 24 hours.

Barnaby appeared with a sad face and told me it was 12 hours.

I failed the module with an 84 percent.

The passing grade was 85 percent.

Barnaby informed me that my quest must start over.

I considered throwing my company-issued laptop out the window.

Instead, I sent an email to HR asking for an extension.

I got an automated reply saying the HR representative was out of the office on a corporate wellness retreat.

I clicked replay on the video.

Chad is about to leave his laptop at the coffee shop again.

This time I hope the hacker deletes my employee profile entirely.

There is almost no where else on earth so diverse with endemic species that you can drive an hour and pass through the habitat of half a dozen different Peacock Spiders and dozens of orchid species! ☀️
I don’t care if it’s only one tree or one bush, we have lost SO much bushland in the south-west and we are guaranteed to have caused so many EXTINCTIONS already of species that never got the chance to be documented! ‼️

When will we understand that constant destruction of these habitats is not progress? We are so lucky to live in the most biodiverse country on earth and we need to start PRIORITISING the little remaining but incredible habitats of the south-west! 👊

In other words, individuals with unhealthy personality traits (such as narcissism, sociopathy, or an excessive thirst for control) are naturally drawn to positions of authority like a magnet.

Once in power, these people tend to abuse it, creating recurring problems for governments throughout history.

The insight shifts the focus from “power corrupts” to the self-selecting nature of who seeks power in the first place.
