You can see they had a more vertical, larger gap, so they used a vertical skin, where the arms of the animal were pointing forward and sewn shut. I assume they hung the skin in the gap and filled it with the cement, then when it hardened some what, they hoisted it and placed the hardening stone into its place.
@derek__olson They could have used animal skins or stomachs as bags to hoist the cement mixture... it could have also been wooden. Animal skins make more sense as the nubs would line up with where the animal skins arms were and weren't supporting the heavy mixture before it set.
