Ok, listen, there is literally nobody, I mean NOBODY, who has talked more shit about Egyptian food than me. I mean, I went to out-of-print travel guides to get screenshots of text authoritatively documenting how bad Egyptian food sucked. But in the last ten years Egyptian food has had a peerless turn-around. When I was there in 2025 I could not believe how good it was. Every single restaurant I went to was excellent, at every price level. This change is so dramatic that there are literally scholars studying this. There are theories about how it happened: more floods of gulf investment money for restaurants; presence of more competent Syrian chefs; the fact that, with both husband and wife having to work all the time, there is less time for cooking at home and more need for ordering out and therefore higher restaurant standards.
