The survival of loaves of bread in carbonised form is well known in Pompeii but astonishingly, in the bakery of Modestus, the oven contained 81 loaves. The opening to the oven was closed with an iron door so they were being cooked at the exact moment of the eruption.

Often associated with the ovens and mill rooms were kneading rooms that contained a counter on which the dough was prepared for baking. Evidence of kneading machines has also been found as have containers for the grain that once had their volume inscribed on their rims.
