This is a traditional Japanese dish called nagashi somen. In Japan, they use long bamboo channels, and people sit around them in a circle. The staff keep sending noodles flowing down the bamboo, and everyone uses two pairs of chopsticks, one to catch the noodles from the bamboo and the other to dip them in the sauce and eat them
