Time to make up some corn bread goodness and I thought I would share!

Jalapeno Cheddar Cornbread

Yield: 9–12 servings (8-inch square pan or 10-inch cast iron skillet) For extra lift/crisp, preheat the cast iron skillet in the oven.
Prep time: 15 minutes
Bake time: ~25–30 minutes

Ingredients

Dry ingredients:
1 cup all-purpose flour
¾ cup yellow cornmeal
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

Wet ingredients:
½ cup butter, melted and slightly cooled
⅓ cup honey
2 Tbsp granulated sugar
2 large eggs, room temperature
1 cup full-fat sour cream (Greek yoghurt substitute)
¼ cup milk

Jalapenos and Cheddar:
1 cup pickled jalapenos
1–2 Tbsp all-purpose flour (for dredging)
1 1/2 cups shredded sharp cheddar cheese (Tillamook recommended)

Instructions

Preheat your oven to 375°F. Grease an 8-inch square baking pan, 9-inch round pan, or 10-inch cast iron skillet generously with butter or cooking spray. (Cast iron gives a nice crispy edge.)

Pat the jalapenos dry before dredging in flour. In a medium bowl, toss the jalapenos with 1–2 tablespoons of flour until evenly coated. Set aside.

In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.

In a separate medium bowl, whisk the melted butter, honey, granulated sugar, eggs, sour cream, and milk until smooth and well combined.

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon just until no large dry streaks remain—do not overmix (a few lumps are fine; overmixing makes it tough).

Gently fold in the flour-dredged jalapenos and cheddar cheese (reserve ½ cup cheese for topping).

Pour the batter into the prepared pan and smooth the top. Sprinkle a few extra jalapenos on top for looks and reserved cheddar cheese for a nice cheesy crust.

Bake for 25–32 minutes, or until the top is golden brown, the edges pull slightly away from the pan, and a toothpick inserted in the center comes out clean or with a few moist crumbs (not wet batter).
If the top browns too quickly, tent loosely with foil.
Let cool in the pan for at least 10–15 minutes before slicing.
