During my undergrad I was taking a 3D design course and basically couldn't use Maya, no matter how many times I tried or people attempted to help me. My brain didn't respond well to the interface and function of the program. Excel is awful in that way as well

I've have not had the opportunity to use a tech-tool independently as an educator (still in practicum), but I have seen JamBoard and Padlet used in some very engaging and easily implemented ways

Schools that are 1to1 with students and a device (laptop/tablet) goes a seriously long way to tech equity. The resources available to students in the libraries and computer labs addresses this as well. These efforts do not allow for connectivity in a students home

I have seen a google survey used to gauge students current emotional state, while also asking about their thoughts and feeling about their current project. Things were kept anonymous so students would be more likely to share their true feelings
